Wire racks are essential to successful bread-making after they come out of the oven and pan.

Due to the high temperature at baking, bread continues to 'cook' even though it is removed from the oven.

Taking bread out of the pan and onto a wire rack ensures that cooling air can flow evenly around the loaf and prevents the loaf from over cooking.

Wire racks also prevent soggy bottoms. If you've ever had bread that was dry and tough on top of the slice, but almost wet at the bottom, you know what I mean.

Furthermore, cooks who leave their bread in the pan, placed on top of a hot oven, will find that their bottoms are easily burnt.
